Antonia Salmon-Earle has completed her International Pastry Diploma at Westminster Kingsway College thanks to a grant from the Women of the Year Foundation. Our initial news story about her grant is online here.

Following her 6 month course at Westminster Kingsway College, a centre of excellence in the catering industry, Antonia has passed with a Merit Award and acquired two positions as a commis chef; one at the Intercontinental Hotel in Park Lane and the other at Macfarlanes LLP where she cooks a wide range of dessert dishes including her favourites; bread and butter pudding and chocolate and pear tart.

Antonia has now been offered a professional commis pastry chef position at The Beaumont Hotel, (opening soon) in Mayfair.

Until a few years ago, Antonia’s baking experience was limited to making cakes made from supermarket baking mix. However, after studying catering at secondary school, Antonia was inspired to pursue a career in baking, and has now learned the skills to follow her dream.

“The course has taught me so many skills which are key in the industry,” Antonia said. “One important thing was learning how to turn traditional home recipes into something that looks professional and presentable, whilst tasting amazing. I’ve also learned the importance of staying organised and tidy. I hope that in the future I can progress to the role of Head Pastry Chef and possibly own my own pastry shop someday.”

Antonia adds: “I want to say a huge thank you to the Women of the Year Foundation. Not only did they help me with my career; they helped me to rebuild my self-belief and I am extremely grateful.”
